First time, Freezer Cooking…


I spend many sleepless nights on Pintrest, pinning all of these wonderful ideas.  I have tried many of the recipes, but one idea I have been wanting to try for some time is freezer cooking.  How perfect would it be to have a freezer full of homemade breakfast, lunch and dinner for those days I’m either to busy or to tired to cook.  I felt rather domesticated this past weekend and decided it was time to cook up some freezer meals.  It seems that many of the blogs I read about freezer cooking cater to rather large families or the mom just likes to make weeks of meals at one a time.  Well, there are only three of us, and my freezer is only so big, so I stuck with four simple recipes.  Plus, being at the height of hurricane season, in Florida, it is not a good idea for me to stock my freezer with more food than we can eat in a couple of days if need be.

This is what I ended up with after about three hours in the kitchen…

10 Apple Cinnamon Waffles

12 Corndog Muffins

Tatertot Casserole – 6 servings

Goulash – 6 servings

Pizza Pasta -6 servings

I split the three meals into six different pans. I used the aluminum round 9″ pans with the cardboard lids from Dollar Tree.  After I put the food in the pans, I then wrapped them with heavy-duty aluminum foil. All of the recipes I used were from Pintrest, tweaked  to my liking! I have more pictures to post along with the recipes that I will put up later!!  All-in-all I think it was a success, but I really won’t know until we try the meals.  This will be a first for us trying out freezer meals…I will let you know how we liked them!


Taco Pizza

At our local all-u-can-eat pizza restaurant they serve a taco pizza, two of my family’s favorite foods!  I decided to make my own version of a taco pizza.  My family LOVED it!  It is a very child friendly recipe, so make sure to let the kids help out.

We started out by using a pre-made pizza crust.  We spread about a half of cup of  fat-free re-fried beans on the crust.  We then made the seasoned taco meat.  I used one pound of ground turkey breast and one packet of taco seasoning.  I followed the directions on the taco seasoning packet.  Then we topped it with shredded sharp cheddar cheese.  I cooked the pizza on my Pizza Pizzaz (love it)!

After the taco pizza was finished cooking we topped it with shredded lettuce, diced tomatoes and salsa.  With a little sour cream and some tortilla chips it made a great dinner!

Dinner tonight May 16, 2010


This is the recipe for the pork tenderloin I made tonight.  It is very easy, and would probably work well on the grill too!

2 tablespoons grated lemon rind
1 clove garlic, crushed
1/2 teaspoon coarse (kosher) salt
1/4 teaspoon ground black pepper
1 (1 1/2 pound) boneless pork loin
Fresh rosemary sprig

Heat oven to 400 degrees F.

In small bowl, combine lemon rind, garlic, salt, and pepper. Rub mixture over surface of pork.

Place pork in uncovered roasting pan; top with rosemary sprig. Roast 30 minutes. Turn roast over and baste with pan drippings; roast 30 minutes longer or until pork is done (170 degrees F on meat thermometer).

Let pork stand 15 minutes on cutting board. Cut pork into very thin slices; serve warm or at room temperature.

Thursday Night Dinner


We have a 7:00pm ballgame tonight, so we get to have dinner at a decent time!  Here is what is on tonights menu:

Easy Sloppy Joes


1 pound ground turkey breast

1/4 cup chopped onion

1/4 cup chopped green bell pepper

1/2 teaspoon garlic powder

1 teaspoon prepared yellow mustard

3/4 cup ketchup

3 teaspoons brown sugar

salt to taste

pepper to taste

In skillet brown turkey, onion and peppers over medium heat;drain. Add remaining ingredients make sure to mix throughly. Reduce heat and cook 30 minutes.

Sides: Fried southern style potatoes, coleslaw, and fresh carrots.

Thursday Night Dinner


Since I knew we would be at the ball fields all night I made dinner early today (didn’t get home until 9:30!). It was a gorgeous day, perfect for an antipasto salad! Along with the salad we had sandwiches and chips.

My antipasto salad recipe:

1 bag Wacky Mac Veggie Spirals Pasta cooked

1 Bottle Ken’s 3 Cheese Italian Dressing

1/4 pound Hard Salami (cubed)

1/4 pound Pepperoni (cubed)

1/pound Mozzarella Cheese (cubed)

1/4 pound Provolone Cheese (cubed)

1 Can black olives sliced

1 Cucumber seeded and diced

1 Yellow Pepper diced

1 Container Grape Tomatoes (I usually slice them)

Mix all ingredients together and enjoy! You could add red onions, none of us really like onions so I leave them out. This recipe makes enough for us to have it for lunch for a couple of days!

I actually cooked a real dinner tonight!

Pounding the chicken

I decided I better make the family something decent for dinner.  I made Italian chicken with pasta and vodka sauce. This is a simple recipe, and pretty yum-o.  I used three chicken breast, pounded them out and cut into smaller pieces.

I dipped the chicken breast into egg whites, then covered with breadcrumbs that I had added salt,pepper,garlic and Italian seasonings to. Next I cooked the breaded chicken in about 2 tablespoons of olive oil. In the meantime I had the pasta, vodka sauce and veggies cooking.

It was a great Sunday dinner!
