Chicken Broccoli Alfredo

Menu for Sunday May, 16 2010.

1lb Chicken

1-2Tbs Olive Oil

about 3/4 box of Linguine Pasta

1 Bunch Broccoli

1/2 Cup Butter plus 2Tbs to cook chicken in.

1 Cup Cream

1 1/2 Cup Parmesan Cheese

Salt/Pepper to Taste

Romano Cheese if desired (to top dish)

Cook pasta according to directions. Steam broccoli. Cut chicken into strips and cook in 2tbs butter until cooked through an slightly browned. Heat cream and butter until melted, add Parmesan Cheese, salt and pepper.Mix noodles, chicken and broccoli top with Romano Cheese. Serve with salad and bread. Not very figure friendly, but very Yummy!!

  1. Oooooh and then after we’ve done that, we’ll be really adventurous and try it with peas AND broccoli! If we dare, that is! LOL!

  2. Whenever we want ‘baby’ to eat his veggies, we tell him if he wants to be strong like Popeye, he has to eat his veggies. It also helps to bribe them with sweets. He he he. Nothing makes them eat their greens faster than the promise of ice-cream. Or should I say ‘Ice-Cweeeem wif Spwinkels!’

    And something so strange happened yesterday. He noticed a bag of baby carrots on the counter and asked if they were ‘cawwots.’ He then shocked me senseless by saying he liked cawwots and proceeded to eat one, raw? When did this happen?

    Sorry totally off topic but totally stuck in my head right now.

    PS: He’s not my baby, don’t worry!
