Pumpkin Muffin/Cupcake Recipe

1 box of Betty Crocker Devils Food cake mix (or Betty Crocker Spice Cake Mix)
1 Small can of pumpkin ( not the mix…but 100% pumpkin)
Mix, bake for 20 – 30 minutes at 400.

Only 2 ingredients! Batter will be VERY thick.  I use an ice cream scoop to scoop the batter into the cupcake liners, then wet my fingers and smooth out the tops a little.  I have tried other cake mixes, but the ones I have listed work the best.  You need to check with a toothpick before you remove from oven, baking time varies.  These are very yummy and pumpkin is very healthy.  My family LOVES these as a breakfast muffin or with fruit and FF Cool Whip as a dessert! Enjoy! Try mixing in a handful of mini chocolate chips!
