First time, Freezer Cooking…


I spend many sleepless nights on Pintrest, pinning all of these wonderful ideas.  I have tried many of the recipes, but one idea I have been wanting to try for some time is freezer cooking.  How perfect would it be to have a freezer full of homemade breakfast, lunch and dinner for those days I’m either to busy or to tired to cook.  I felt rather domesticated this past weekend and decided it was time to cook up some freezer meals.  It seems that many of the blogs I read about freezer cooking cater to rather large families or the mom just likes to make weeks of meals at one a time.  Well, there are only three of us, and my freezer is only so big, so I stuck with four simple recipes.  Plus, being at the height of hurricane season, in Florida, it is not a good idea for me to stock my freezer with more food than we can eat in a couple of days if need be.

This is what I ended up with after about three hours in the kitchen…

10 Apple Cinnamon Waffles

12 Corndog Muffins

Tatertot Casserole – 6 servings

Goulash – 6 servings

Pizza Pasta -6 servings

I split the three meals into six different pans. I used the aluminum round 9″ pans with the cardboard lids from Dollar Tree.  After I put the food in the pans, I then wrapped them with heavy-duty aluminum foil. All of the recipes I used were from Pintrest, tweaked  to my liking! I have more pictures to post along with the recipes that I will put up later!!  All-in-all I think it was a success, but I really won’t know until we try the meals.  This will be a first for us trying out freezer meals…I will let you know how we liked them!

I made these cute little snacks recently for my son’s birthday. They are so simple to make and the kids as well as the adults loved them. I had many treats to make so I went the simplest route possible by buying packaged rice crispie treats. If I had more time I would have opted for homemade rice crispie treats. You can change the colors up however you want. Next time I think I will go with green fruit roll ups and all red Sweedish Fish.

What you need to make 16-

1 box 8 count rice crispie treats
1 bag Sweedish Fish
6-8 Fruit by the Foot fruit rolls

Cut the crispie treats in half, sit the fish on top and wrap with enough of the fruit roll to go all the way around. It’s that easy! The seam of the fruit roll should be in the back. The fruit roll is sticky enought that you don’t have to use anythnig to secure it.

Taco Pizza

At our local all-u-can-eat pizza restaurant they serve a taco pizza, two of my family’s favorite foods!  I decided to make my own version of a taco pizza.  My family LOVED it!  It is a very child friendly recipe, so make sure to let the kids help out.

We started out by using a pre-made pizza crust.  We spread about a half of cup of  fat-free re-fried beans on the crust.  We then made the seasoned taco meat.  I used one pound of ground turkey breast and one packet of taco seasoning.  I followed the directions on the taco seasoning packet.  Then we topped it with shredded sharp cheddar cheese.  I cooked the pizza on my Pizza Pizzaz (love it)!

After the taco pizza was finished cooking we topped it with shredded lettuce, diced tomatoes and salsa.  With a little sour cream and some tortilla chips it made a great dinner!

Birthday Cookie

Bubby just celebrated a birthday.  His birthday cake request was for a giant chocolate chip cookie.

Normally I would make chocolate chip cookies from scratch, but I happened to have coupons for the cookie mix and icing so I decided to make it the easy way.  I was able to make his birthday cookie for around $2.00!

I just followed the cookie directions on the bag, used an aluminum pizza pan and baked for 15 minutes.

Bubby loved his Birthday Cookie!

How does your garden grow?

Well if you are me not very well.  I have the blackest thumb ever.  Bubby brought a cabbage plant home before the end of the school year and was so excited. The only thing he had to do to win a prize was to grow a healthy cabbage and bring a picture of him with his cabbage back to school this fall.  I thought how hard can it be to grow one cabbage, apparently harder than we thought.  His poor cabbage looks the same today as the day he brought it home 2 months ago.

Lucky for me my dad is an awesome gardener!  He has a little garden in his back yard for my mom to use daily, and he and my great uncle have a much larger garden outside of town.  For the past few summers I have been lucky enough to visit my parents during the summer and have my mom teach me how to can.  She has been canning since a small child, it was a normal part of their summer.  She told me a story about how each age group of kids had different jobs.  The worst job being for the littlest kids, jar washing! Since they had the smallest hands, they made the best jar washers, she couldn’t wait to grow out of that job!

We had so much fun this summer canning tomatoes, chili sauce, tomato juice, hot pepper butter, and blackberries.  My mom had already canned green beans and corn for me before I visited.  I am so grateful to have have my pantry stocked with all the wonderful vegetables my dad grew and my mom and I canned.
